Fried Rice a'la jenny
Fried Rice a'la jenny. Ingredients: 1 X large Onion sliced or diced 250gms of diced bacon or 4 bacon rashers diced 2 X eggs, beat together in a cup with fork Frozen Mixed Vegies or 1 x red capsicum seeded and sliced or diced 1 x green capsicum seeded and sliced or diced 1/2 cup of baby peas 1/2 cup of green beans cut or whole (You may use any other fresh vegtable if desired) 4 large mushrooms sliced 2 cups of Basmati rice already cooked To cook: In one large non stick frying pan or wok, add 1 x tablespoon of oil or low fat margarine to cook beaten eggs, first pour contents of eggs in wok cook until golden the egg maybe cut up in the wok while cooking. When egg is cooked place in a bowl for later use. You may need to add a little more margarine or oil, heat oil then add bacon and onion, cook until tender then add mixed vegies and mushrooms make sure you dont let the vegies stick to frying pan if they start to stick adding a little more oil can help. Sprinkle a fried rice seasoning over vegies to desired taste. Once all vegtables are tender, add cooked rice mixing the rice and vegtables well together in the wok or frying pan. When rice has reached a desirable temperature it is ready, you dont want to burn the rice, so have a low gas. Adding chicken or lamb shaslicks on side of plate makes for a great family meal for 4 people. And very delicious. |
